STUFFED PORK LOIN WITH DRESSING
Dressing

2 cups cornbread dressing

2/3 cup Parmesan cheese

1/4 cup dry parsley

1/2 teaspoon poultry seasoning

1/2 teaspoon Italian seasoning

Salt and pepper to taste

1 onion, chopped and sauteed

1/2 cup celery, chopped and sauteed

2 cloves garlic, chopped and sauteed

1 cup butter, melted

Chicken broth
1. Mix all in bowl adding chicken broth until smooth and juicy.
2. Slice 3-1/2 - 4 lb. pork loin to open flat.
3. Stuff with dressing. Roll and tie to hold together.
4. Smooth mayonnaise over the top with a pinch of Italian seasoning.
5. Bake at 325 degrees for 2 hours or until done. Slice and serve.
