BROCCOLI BREAD

  • 10 ounces frozen, chopped broccoli
  • 8 ounces mild cheddar chheese, grated
  • 1 box Jiffy cornbread mix
  • 3 eggs, beaten
  • 1 large onion, chopped
  • 1 stick margarine, melted
1. Mix together, adding cheese last.

2. Spray pan with cooking spray or grease lightly a large cast iron skillet or a 9 X 13 inch pan.

3. Sprinkle a little corn meal over bottom of heated pan.

4. Bake at 400 - 450 degrees until brown (25 - 30 minutes)
